This week’s cheat was given to us by Jaclyn of SportSetter! We actually heard rave reviews about this not only from the guys at SportSetter but friends of Jaclyn’s at the app launch party!

Peanut Butter Cheesecake Protein Mousse

Servings: 2
Ingredients:
3 Tbsp PB2 or PB2 Chocolate (powder form unmixed)
1 Cup low fat Cottage Cheese
½ tsp Vanilla Extract (No High Fructose Corn Syrup)
2 Packets of Stevia

Directions:

1. Place all ingredients Magic Bullet, blender or food processor and blend for about 2 minutes until you reach a light airy consistency

*** it may get stuck until it become a thinner consistency, if that occurs stop and mix with a spoon then start the magic bullet again. Eventually it will all be a smooth consistancy

2. Cover and chill in the fridge and enjoy!

Ice Cream Sammie

So this past weekend we decided to make some cookies to bring out to Michelle’s mom, Trish! These cookies were the previously successful Almond Butter Dark Chocolate Chip Cookies from fastpaleo that we had made for St. Patrick’s Day weekend but something was just not right with this batch.  So instead of ditching the entire lot of them, as they were still yummy just didn’t really look like cookies, we used them to make ice cream sandwiches!

Simply took the cookies and put our favorite Arctic Zero flavor in between and voila! A very guilt-free ice cream sandwich!

Real Deal Choc Chip Cookies

Lets discuss this ridiculously amazing recipe for “everything-free” chocolate chip COOKIES!

They are the Real-Deal Chocolate Chip Cookies from Against All Grain! We followed the recipe exactly using the grassfed butter suggestion (check out the recipe and you’ll understand) and they were AMAZING! We took them on vacation with us and they were the perfect treat and home comfort for the plane ride or just snacking while we were back in the room!

We were so excited when our guest this week, Michele Gordon, aka Miss Motivational, shared this recipe with us! We absolutely LOVE Enjoy Life Chocolate Chips and cannot wait to make this treat that can be used as a dessert or a pre-workout snack!

Miss Motivational’s Recipe/Cheat of the Week

Ingredients:
1 cup Gluten Free Quick Cooking Oats (Bobs Red Mill Brand)
1-2 Ripe Bananas
1/2 c of Enjoy Life Choc Chips (I love the chunks, even more chocolate!)
2-2.5 tbsp of almond butter

Directions:
Mix it up, make balls out of the mixture, and put them on a baking sheet
Put the batch in the oven for about 15 minutes at 350 degrees (sometimes I bake it a little bit longer or shorter depending on how crispy I want them!)

Sometimes I add a dash of cinnamon and honey to the mix.

Basically this is delicious and satisfying way to fill that sweet tooth. I’m always looking for ways to eat chocolate that fill me up :)

Baked You Out!

This week’s cheat isn’t even that much of a cheat.  We totally faked out our taste buds here with this VERY healthy cheat of Baked Apples with Coconut Milk!  We agree that you could even leave out the coconut milk and it would still be just as yummy!  But you simply microwave a cored apple, add some chilled coconut cream or coconut milk, silvered almonds and cinnamon and voila! Additionally,  Michelle’s studio had a birthday to celebrate today and the birthday girl requested non GMO baked goods and Michelle found Jennifer’s Way Bakery - A Gluten Free, Non GMO, Soy, Dairy, Peanut free bakery.  The cupcakes were baked fresh before they were delivered this afternoon and the staff said they were amazing!  Michelle is having her cupcake tomorrow after this final day of Whole30 ends!

Stadium Sized Cheating

Super Bowl Snack Stadium

Well here it is folks, the touchdown of all cheats: How to Build a Super Bowl Snack Stadium.  Now as we said on the show, you can totally make a healthy version of this, but chances are if you’re going to do your party this big, you’ll probably go all the way to the end zone with it! Burgers, wings, dogs and all!

Smart Christmas Indulgence: Eggnog Chocolate Chip Cupcakes

We were very excited to make this cheat of the week! We went as far as to make the cashew butter from scratch, which was a little bit of a challenge in our food processor but we gave it a shot! Next time I would definitely buy the cashew butter instead of trying to make it.  I was just too worried i was going to burn out the motor of my processor!

The cupcakes themselves came out very good but I would’ve also done something different with the icing, which you will note below is basically pure coconut oil.

In any event, here’s a few shots of the process which was a lot of fun!

Eggnog Chocolate Chip Cupcakes from TGIPaleo
• Servings : 12
• Prep Time : 15m
• Cook Time : 30m
• Ready In : 45m

Ingredients
• 1/2 c coconut flour
• 5 eggs
• 2 egg whites
• 1/2 c cashew butter (or coconut oil for nut free)
• 1/2 t salt
• 1/2 t baking soda
• 1/2 t baking powder
• 1/3 c maple syrup
• 3/4 c eggnog
• 1/4 t vanilla
• 1/2 t nutmeg
• Frosting: 1 c palm shortening (or coconut oil)
• 2 T heavy whipping cream or coconut milk (canned, full fat)
• 1 t vanilla
• 2 T maple Syrup

Whisk together the dry ingredients. Beat the eggs, whites, egg nog, butter, vanilla, and maple syrup. By ½ cup-fulls, add the dry mixture and whisk until smooth. Fold in the chocolate chips. Preheat the oven to 350 degrees. Fill lined muffin tins ½ full with batter. Bake for 25-30 minutes, or until a toothpick. If you want to do a loaf instead, bake in a loaf pan, same temp, for 50-55 mins. For the frosting, beat all the ingredients till light and fluffy!

So to keep things themed, I found a really cool website that had excerpts from The Runners World Cookbook!

This Chocolate Berry Crisp looked like a really yummy “cheat’ recipe! Note, these recipes are for people who are training to run races that are 5k or more so they have the calorie room for a dessert like this!

DESSERT: Chocolate Berry Crisp

The good news about training for a marathon is that it does leave you with a bit more caloric wiggle room for slightly indulgent treats. This chocolate berry crisp still has plenty of good-for-you nutritional value, including fiber from oats and inflammation-reducing antioxidants from the berries and chocolate.

Makes: 8 servings
Total time: 50 minutes
Recipe Key: Vegetarian, Low-Calorie

2 bags (12 ounces each) frozen mixed berries, such as strawberries, blackberries, raspberries, and blueberries, thawed and drained, or 5 cups fresh berries
2 to 3 tablespoons cornstarch
2 tablespoons honey
1 cup rolled oats
1/3 cup toasted wheat germ
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1 cup chopped almonds
1/3 cup dark or bittersweet chocolate chips
Vanilla ice cream

Preheat the oven to 350°F. In a bowl, mix the berries and cornstarch. (If using thawed frozen fruit, use the higher amount of cornstarch.) Pour the fruit into an 8″ x 8″ glass baking dish.

In a small bowl, combine the honey, oats, wheat germ, brown sugar, cinnamon, and almonds. Spread over the berry mixture. Bake for 30 minutes.

Remove the dish from the oven and top evenly with the chocolate chips. Return the dish to the oven and bake for 10 minutes, or until the chocolate is melted. Serve warm topped with a small scoop of vanilla ice cream.
NUTRITION PER SERVING: 296 calories, 41 g carbs, 7 g fiber, 8 g protein, 13 g total fat, 2 g saturated fat, 5 mg sodium
